Here are some other sources of information on deer/elk venison and meat products. Cookbooks There are hundreds of cookbooks on the market dealing with how to cook and prepare venison. A good place to look would be at Amazon.com or Chapters.ca. However, we recommend two cookbooks that we found particularly useful, and whose recipes we have posted here. Cooking with Elk published by the Iowa Elk Breeders Association. Alberta Venison Gourmet published by the Alberta White-Tail and Mule Deer Association. On-line Resources Here are some websites that we found had good information and recipes on venison. Alberta Elk Association has a section on their web site providing information on nutrition, Alberta ranched elk meat suppliers, and quality assurance. Saskatchewan Elk Breeders Association have created a new website to promote ranched elk meat. The site has excellent information about venison including a great collection of recipes. Wapiti.net has two good sections on venison - one on nutritional data and another one on venison recipes. The Canadian Cervid Council has venison cooking information and a list of restaurants, butchers and distributors in the Toronto area. New Zealand Venison has over 160 recipes for venison along with nutritional information and local suppliers. The British Deer Farmers Association has the Good Venison Guide site where they provide cooking advice and recipes for farmed vension, and have a directory of suppliers. The Indiana Elk Breeders Association have a directory of their members who sell ranched elk meat. The Maine Deer and Elk Farmers Association provide information on venison and have a list of their members that market farm-raised venison. The Venison Forum has some butchering information and recipes. T. Budd’s Venison Page has some interesting recipes. For Venison Producers If you are a deer, elk or reindeer farmer/rancher who wishes to produce for the venison market, here are some articles and reports that you may find useful.
Also, here are two very good reports that have lots of useful information on what needs to done to develop a successful venison industry. Saskatchewan Specialty Livestock Marketing Study, done by Kaji Kado of PPD Technologies Inc. 1998. Somewhat dated but still the best report on the issues and challenges facing producers in developing meat markets. Contact Sask. Ag and Food. Marketing Plan, Canadian Bison Marketing Council, 2001. Although this report specifically looks at selling buffalo, much of the ideas and suggestions apply to marketing venison as well. (Adobe Acrobat Reader required). |
