Free-range venison produced and field-shot on the farm. Carcases are hung for 2-3 weeks for great flavour and texture. Our butcher then produces a huge range of venison cuts, from osso buco to fillet steak, from joints on the bone to choice braising cuts, steaks and casseroles. We also make additive-free products, e.g., sausages, smoked venison, wee pies, olives, haggis, carpacio, etc.
